Metal flashing shims have saved me a few times, especially on older decks where nothing’s level anymore. I’ve also tried stacking composite shims, but they tend to shift over time. Honestly, I’ve found that if the trusses are too far gone, sometimes sistering a new joist is less hassle in the long run... not pretty, but it keeps things solid.
