I've found aluminum flashing pretty reliable too, but honestly, nothing's ever truly maintenance-free. As for plants and substrates, sedums have been my go-to—they're hardy, drought-tolerant, and don't need much fussing over. Tried some grasses once... looked great at first but ended up being a headache with trimming and debris buildup. Learned that lesson the hard way. Roof gardening is definitely rewarding, but yeah, the upkeep never really stops does it?
