I'm about to hire someone for a kitchen remodel, but um, I'm kinda paranoid about getting scammed or ending up with shoddy work. What's the easiest way to double-check their certifications and stuff before handing over my cash?

Totally understandable concern... I'd suggest verifying their license number through your state's contractor licensing board website. Also, checking their insurance coverage directly with their provider can save you headaches later on. Better safe than sorry.
